Day 27 of Harvest

 



 This is a note from our Mayor Nov. 4th. 

Your first red flag in his speech should be his use of the word democracy. 

He also says this..."Your voice matters, your participation is crucial, and your actions can shape the future of our city and our nation."

He also says to "vote with courage, empathy and humility"...nah...I voted for Gods wrath.

Did you know you don't have to accept a government 'official' lying to you.  

Force the hand.

He was not duly elected if We The People didn't know of THIS but other* government officials did..."come on man."


Anyway...I have a great deal to be thankful for this Harvest, besides this utter maddening corruption in my own back yard...so here is a pretty good green bean casserole and a pumpkin thing...you are welcome.


Blanch the green beans in heavily salted water, 3 min, then shocking ice bath, then drain...add to the magic bowl. 

Sautéed thinly sliced yellow onion and semi caramelized them for the blackened bottom bits I desire so to deglazed with Shaoshing, which has incredible similarities to a Spanish sherry; then add a bit of butter, stir and sauté those mushrooms and add a touch of salt. Those baby shiitake mushrooms I diced I removed the stems and added to the broth I already made and will use in the béchamel (Sometimes for get to tell people to add salt, I figure it's just natural, nope, the salty life ain't for some.)...add it to the magic bowl.

Make a béchamel but while butter melts add some garlic crushed and chopped, salt and pepper. Add the flour, stir and cook, I'm assuming you know how to do this...when ready add your cold milk and your broth with those mushroom stems and stir and wait and stir and wait and cook some more... add some shakes of Worcestershire sauce and black pepper, maybe thyme and fresh parsley. Make sure it tastes good...add it to the magic bowl.

This is a make ahead...put in a baking dish...

Later I'll crush some cracker and add those French fried onions with a bit of melted butter mixed in, put it on top and cook that sucker on Thanksgiving at 375 F for about 30-45 min.



and here is this pumpkin pasta thing...

Rigatoni boiled for 8 min in heavily salted water then drained...add to the magic bowl.

Brown butter béchamel with garlic and fresh sage (whole and removed after infusion) from my yard, you will have to find your own sage...add it to the magic bowl.

Roasted pumpkin with a maple, pomegranate molasses, a tad of smoked paprika, a pinch of cinnamon, and a dash of my spiciest and best pepper glaze...400 F, for 20ish min or a bit more..add it to the magic bowl.

You could add some gorgonzola or blue cheese but didn't cause of the crowd (I'll use it in the Brussel sprouts), parm would be pedestrian but still good.

Stir it all up and top with the same stuff as the green beans; make life a little easier and multi functional and still good, it also bakes the same temp and time. 


 

Don't forget the salt.
